150g ready rolled puff pastry
1 egg
2 slices of parma ham
4 slices of chorizo
2 tbsp homemade caramelised onions (see Philidelphia canapes)
50g goats cheese
2 tbsp tomato puree
Preparation
Method;
* Cut the pastry into equal squares and brush with a beaten egg
* Spread 1 tbsp of puree onto each square then layer on 2 chorizo slices and sprinkle on the goats cheese over them and place in a preheated oven (200C)
* When the pastry is cooked, place the parma ham and onions on top and serve.
