Ingredients

1 Head of Cabbage

2 carrots, peeled (or similar amount of peeled baby carrots)

1 small onion (red onion adds color)

8 tablespoons of red wine vinegar

1 cup of sour cream (light or non-fat also works)

1 cup of Miracle Whip

2 tablespoons of dijon or brown mustard

1 teaspoon of salt

1/2 teaspoon pepper or to taste

Preparation

Thinly slice, chop or grate cabbage and carrots into a large bowl. Chop onion into small pieces and add to cabbage. Add the rest of the ingredients into the bowl and and combine. Cover bowl and refrigerate for at least one hour before serving to allow flavors to blend.
