Ingredients
6 c. cubed crusty bread
1 lb tomatoes, cubed
1/2 c. sliced red onion
1/2 c. EVOO
2 T red wine vinegar
10 basil leaves
Optional:
1 T lemon zest
Other fresh herbs
Grilled, sliced peppers (2-3)
Mini mozarella balls, sliced in half

Combine all ingredients thoroughly. Best at room temperature.
