Ingredients

2 egg whites

1 whole egg

1 cup whole wheat panko bread crumbs

2tbsp EVOO

4, 4oz pork chops

Preparation

  1. Mix egg whites and whole egg on a large flat plate.
  2. Place panko bread crumbs on a separate large plate.
  3. In a large skillet over medium heat, add EVOO.
  4. Taking one pork chop at a time, first coat with egg on both sides, then coat with bread crumbs on both sides and place in hot skillet.
  5. Cook on each side for approximately 8 minutes or until meat is no longer pink.
  6. Serve with apricot balsamic vinaigrette.
