Ingredients
2 large carrots, chopped
1 large onion, chopped
1-2 sticks of celery, chopped
1 large red pepper, chopped
8 oz. mushrooms, chopped
1 small sweet potato
1 cup green lentils
half cup of pearl barley
8 oz.chopped or cubed pancetta
8 cups chicken broth
2 cups beef broth
Preparation
Over medium heat, saute pancetta until lightly browned. Add chopped carrots, celery, onion, and red pepper. Saute 5-7 minutes until soft. Add lentils and stir until thoroughly mixed. Add the 10 cups of broth and bring to a boil. Turn the heat down to a simmer about 40 minutes. Add the sweet potato, mushrooms and barley. Simmer for another 40 minutes.
