Ingredients
1 cup flour
1 tbsp sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup milk
1 egg
1 tsp vanilla
2 tbsp butter, melted
Preparation
Combine the dry ingredients. Make a well in the center and pour in the milk, egg, vanilla, and butter. Mix until moist but lumpy.
Heat a greased pan over medium high heat. Pour in some pancake mix. When the pancake starts to bubble on top and is golden brown on the cooked side, turn it and continue cooking until both sides are golden brown.
The first pancake is a batter test; adjust batter by adding more flour to thicken or milk to thin. Lower heat as pan tends to get hotter as you cook the cakes.
Keep the cooked pancakes covered to keep warm until all the cakes are done.
