Ingredients
Dry Ingredients:
1 cup flour
1/4 cup sugar
1 teaspoon nutmeg
1/2 teaspoon salt
2 1/2 teaspoon baking powder
Wet Ingredients:
2 eggs
1/2 cup milk
1/2 cup buttermilk
1 teaspoon vanilla
2 tablespoon butter, melted
Preparation
Combine dry ingredients and whisk together. In a separate bowl, combine wet ingredients and lightly beat eggs. Add wet ingredients to dry, and mix until barely combined (some small chunks are ok). Overmixing will result in flat pancakes.
Place about 1/2 cup of batter on a hot griddle for about 1 minute, or until bubbles form on the surface of the pancake. flip, and cook an additional 30-60 seconds.
