Ingredients

200ml milk

1 small egg

pinch of salt

1/3 tsp baking powder

half cup flour

Preparation

Don’t over beat; mix as little as possible. Mix egg and milk. Sift in flour and baking powder. Add pinch of salt. Batter can sit for up to 24 hours. Heat heavy-based pan, until a drop of water sizzles. Grease pan. Pour a thin layer of batter. When it is set, turn and brown.

Sprinkle with fine sugar, and squeeze lemon juice over it. Rollup and eat.
