Ingredients

1/4 cup balsamic vinegar

3 tbsp olive oil

1/4 tsp salt

1/4 tsp fresh black pepper

1/4 tsp crushed red pepper

3 garlic cloves, minced

4 c chopped tomato

1 c chopped cucumber

1/4 c diced part skim mozzarella cheese

1/2 c thinly sliced fresh basil

3 tbsp chopped pitted kalamata olives

1 (8oz) day old ciabatta bread cut into 1/2 in cubes

Preparation

  1. Combine first 6 ingredients in small bowl and whisk together.
  2. Combine tomato and next 5 ingredients in a large bowl. Pour dressing over salad and toss gently. Let stand at least 10 minutes or until dressing soaks into bread.
