Ingredients

For the Lambloin:

4 lbs. lambloins, trimmed

1/4 cup olive oil

1 Tbs. garlic cloves, minced

2 Tbs. cracked black pepper

2 Tbs. kosher salt

For the Lemon Herbed Olive Oil:

4 Tbs. extra virgin olive oil

2 Tbs. lemon juice

1 Tbs. garlic clove, minced

1 Tbs. shallots, minced

1 Tbs. cracked black pepper

1 tsp. chives, snipped

1 tsp. parsley, chopped

1 tsp. rosemary, chopped

2 tsp. kosher salt

Preparation

For the Lambloin: In a large mixing bowl marinate lambloin with olive oil, garlic, and cracked pepper.

Season Meat with kosher salt and sear or grill lambloins to desired doneness (medium rare is best).

For the Lemon Herbed Olive Oil: In a mixing bowl mix together extra virgin olive oil, lemon juice, garlic, shallots, cracked pepper, chives, parsley, rosemary, and kosher salt.

Pour Lemon Herbed Olive Oil over cooked Lambloin and serve with a nice pasta and salad.
