Ingredients
1 1/2 tbsp black, white or mixed peppercorns
3/4 tspn whole coriander seeds
2lb Ahi tuna filets
1 cup chardonnay
1/2 pint whipping cream
1 tspn fresh lemon juice
1/2 tspn salt
2 tbsn butter
2-3 tspn wasabi paste
1 tbsp olive oil
Preparation
Crush pepper corns and coriander seeds, spread on plate and press firmly into filets to coat.
Heat chardonnay until reduced by half (10mins). Add cream (3min) then lemon and salt. Reduce heat to simmer and whisk in butter one piece at a time until thick (2min) add wasabi paste to taste
Heat olive oil and fry tuna steaks as desired
Serve sauce on top
