Ingredients
2 pounds fingerling potatoes cut into 1/2 inch rounds
1/4 cup olive oil
1/2 pound thick cut pancetta cut into 1/3-in dice
1 onion thin sliced
1/4 cup fine chopped dill
Preparation
- Boil potatoes until just tender about 8 min. Pat dry
- In skillet heat oil. Add pancetta and cook over moderate heat until lightly browned, 3 min. Using slotted spoon transfer to a bowl
- Add potatoes to skillet, season with salt and pepper. Stir occasionally till browned, 10 min. Add onion, cook till soft and potatoes are brown, 10 min. Stir in pancetta, cook 2 min. Toss with dill. Serve
