Ingredients
2 large yellow onions
1/4 cup vegetable oil
1/2 tsp. ground cayenne pepper
kosher salt to taste (1 tsp.)
ground black pepper to taste
4 ounces cream cheese, at room temperature
½ cup sour cream or Greek style yogurt, thoroughly drained.
½ cup mayonnaise (optional)
Preparation
Thoroughly caramelize the onions in the vegetable oil. Remove excess oil.
Add cream cheese, drained sour cream (or Greek style yogurt), salt, pepper and mayonnaise (if desired) in a large mixing bowl. Blend in with caramelized onions.
You may reserve a few slices of caramelized onion to use as a garnish.
