Ingredients

2 large yellow onions

4 tbsp. Butter

1/4 c Vegetable Oil

1/4 tsp. cayenne pepper

1 tsp. Kosher salt

1/2 tsp ground black pepper

4 oz cream cheese (at room temp)

1/2 c good mayonnaise

Preparation

Cut onions in half, then slice them into 1/8in. thick rounds. Heat butter and oil in saute pan on medium heat. Add onions, cayenne, salt and pepper. Saute together for 10 minutes. Reduce heat to med-low and cook, stirring occasionally for 20 minutes until browned and carmelized. Remove from heat. Place cream cheese, sour cream and mayo in electric mixer bowl w/ paddle attachment and beat until smooth. Add onions and mix well. Combine all together in bowl and sprinkle with parmesan. Cook at 350 in oven for a few minutes, just long enough to melt cheese over the top.
