Ingredients
1 lg. Onion, chopped
1 clove Garlic, minced
1 Green pepper, chopped
1 lb Ground beef, lean
1 can Whole Corn, drained
1-15 oz Tomatoes, diced
1 small can Mushroom pieces
3/4 lb Sharp cheese, grated
1 small can Tomato Paste
1- 15 oz Tomato Sauce
1 lb. pkg. Vermicelli Pasta
Noodles, cooked and drained
Preparation
In skillet, melt abt 1 Tbls. margarine, add, onion, green pepper & garlic. Sauté. Add ground beef. Stir & brown. Add salt & black pepper to taste. Now add corn, tomatoes, mushroom pieces, noodles and 1/2 lb. shredded cheese (reserve 1/4 lb for topping).
Pour into large casserole dish. Cover with foil. Bake at 350˚ for approx. 40 min. Uncover, top with remaining cheese, bake 20 min. more.
Serve with salad and toasted Italian bread….mmmmm!!
