Ingredients
1 can hearts of palm
1 stalk celery
1 small onion
2 slices bacon, chopped
1 tbsp capers
1 tbsp red peppercorns
1/2 cup roquefort or other blue cheese
1-2 tbsp walnut oil
2 tsp cider vinegar
1-2 tsp poppy seeds
salt to taste
Preparation
Crumble the cheese into a mixing bowl. Mix in the vinegar and oil to create a dressing. Slice the palm hearts and celery on the diagonal. Slice the onion very thin. Add all ingredients to dressing in bowl and stir. Adjust salt. Serve cooled.
