Ingredients

4 DOZ OYSTERS

4 STALKS CELERY

1 BUNCH GREEN ONIONS

3 CLOVES GARLIC

1 1/4 CUPS BUTTER

1/2 TS ANISE

4 TBL PARSLEY

2 CUPS SPINACH

2 TS SALT

1/8 TS CAYENNE

1 TS LEMON JUICE

3 TBL WORCESTERSHIRE

2 TBL ANCHOVY PASTE

1 CUP BREAD CRUMBS

SPRINKLE PARMESAN CHEESE

Preparation

Preheat oven to 350. Sauté celery, onion, and garlic in butter for 5 minutes. Squeeze moisture from spinach and add to sautéed mixture. Add remaining ingredients (except bread crumbs) and cook until soft. Mix well using a processor or blender if available. Drain oysters. Place into oyster shell. Add a tablespoon or so of the mixture on top of each oyster. Sprinkle with breadcrumbs and Parmesan cheese. Bake 10 minutes or so.
