Ingredients
Tartar Sauce:
1 c. mayonnaise
3 Tbl onion, minced
3 Tbl sweet pickles, minced
2 tsp fresh lemon juice
1 tsp Worcestershire
1/2 tsp hot sauce (+ more if you like)
S&P to taste
Oysters:
1 qt fresh oysters
Shortening, for frying
1 c cornmeal
1 c instant cornbread mix
S&P to taste
Preparation
Tartar Sauce: Mix all ingredients well. Cover and chill.
Oysters: Bring oysters close to room temperature in their own liquor.
Heat a cast-iron skillet and add enough shortening for a shallow fry (about 1 to 1 1/2 inches). Mix the cornmeal, cornbread mix and S&P in a wide, shallow bowl.
Remove oysters from their liquid and roll each in cornbread mix, coating well. Fry oysters in hot oil and drain on paper towels or a rack set over a sheet pan.
Lightly salt each oyster and serve hot with homemade tartar sauce.
