Ingredients

One Loaf of stale French bread

2 tablespoons of butter

1/2 cup chopped green pepper

1/2 cup chopped celery

1/2 cup chopped onion

24 oysters

1 cup of oyster water

1 teaspoon of Tabasco

1 teaspoon of coarse black pepper

1/2 teaspoon of Lea & Perrins

1 teaspoon salt

1/3 cup of toasted pecan pieces

1/3 cup of green onions

Preparation

Soak the French bread in water. Remove as much water as possible. Melt the butter in a pan and saute the green pepper, celery and onion until opaque. Add 2 cups of bread, oysters, oyster water, Tabasco, coarse black pepper, Lea & Perrins and salt. Reduce by 1/2 over high heat, until it stand on its own as dressing. Top with pecan pieces and green onions
