Ingredients
2 pound veg of your choice
1/4 cup exra-virgin olive oil
2 large cloves garlic, minced
1 TBS chopped mixed herbs(chives, thyme; rosemary)
4 TBS chopped flat leaf parsley
Salt and peppper to taste
Preparation
Preheat oven to 400, place chopped vegetables in a large mixing bowl and toss with herbs and oil. Pour seasoned begetables into a rimmed baking sheet in a single layer and roast until browned, stirring halfway.
