Ingredients

4 to 6 large scrubbed potatoes c/w skins.

Marinade:

1/2 cup Virgin Olive Oil

2 tablespoons fresh lemon juice (you can use realemon in place of fresh lemon)

1 clove crushed garlic

2 teaspoons of Greek Seasoning

1 teaspoon of Mint

Salt and Pepper to taste.

In place of the Greek Seasoning and Mint you can use your favourite spices. The results will be just as good.

Preparation

Cut the potatoes in half and then into wedges. Each half should give you 3 wedges.

Mix the ingredients of the marinade together.

Cover the potatoes in whatever method you prefer.

Bake in a shallow baking pan at 400 degrees for 35 minutes or until golden brown.
