Ingredients
Red skin potatoes
1 pkg of dried Italian dressing
Olive oil
Parmesan cheese (optional)
Bacon, crisply cooked and crumbled (optional)
Preparation
Preheat oven to 425*
Cut potatoes into small bit-sized chunks.
Mix dried Italian dressing with olive oil and combine with potatoes to thoroughly coat.
Layer potatoes on a cookie sheet and sprinkle with Parmesan cheese.
Bake for 30 minutes or until edges are golden brown and potatoes are heated through. Serve warm
