Ingredients

Red skin potatoes

1 pkg of dried Italian dressing

Olive oil

Parmesan cheese (optional)

Bacon, crisply cooked and crumbled (optional)

Preparation

  1. Preheat oven to 425*

  2. Cut potatoes into small bit-sized chunks.

  3. Mix dried Italian dressing with olive oil and combine with potatoes to thoroughly coat.

  4. Layer potatoes on a cookie sheet and sprinkle with Parmesan cheese.

  5. Bake for 30 minutes or until edges are golden brown and potatoes are heated through. Serve warm
