3 lbs. baking potatoes, peeled and cut into 1/4 inch thick strips

4 tsp. vegetable oil

3/4 tsp. salt

Pam

2 T butter

8 garlic cloves, minced (about 5 tsp.)

2 T finely chopped fresh parsley

2 T freshly grated parmesan cheese

Preheat oven to 400. Adjust oven rack to middle position.

Place potatoes, oil, salt in a bowl or zip-loc bag; toss to coat.

Spray a baking sheet or jelly-roll pan with Pam. Arrange potatoes in a single layer on the sheet, leaving a little space between them.

Bake until tender and golden brown, about 50 minutes, turning potatoes after 20 min.

In a large, deep nonstick skillet, cook the butter and garlic over low heat for 2 minutes, stirring constantly. Add the potatoes, parsley and cheese; toss to coat.

Serve immediately.
