Ingredients
1 lb filet of flounder, catfish, tilapia or other mild flavored fish
1/3 cup butter, melted
1 TBS lemon juice
1/4 tsp pepper
1/2 tsp paprika
1/2 tsp basil
1/4 tsp garlic powder
1 cup dry breadcrumbs or panko
2 TBS oil or non-stick spray
Preparation
Combine butter, lemon juice, pepper, paprika, basil and garlic. Dip fish in butter/herb mixture, then in breadcrumbs. Arrange fish in one layer in oiled pan. Spoon remaining butter mixture over fish. Bake uncovered in 375 degree oven for 20 - 25 minutes until fish flakes easily.
