Ingredients

-2 Tbs. Olive Oil

-2 Strips of Bacon Diced

-1 Small Onion Diced

-2 Cloves Garlic Minced

-1/2 cup Frozen Mixed Peppers from Trader Joe’s

-1 tsp. Italian Seasoning

-Dash of Cayanne Pepper

-2 Cups Whole Wheat Penne Pasta Cooked in Salt Water and Rinsed

-2 Center Cut Skinless Salmon Filets (pick your serving size)

-Salt

-Pepper

-1/2 tsp. Thyme

-Olive Oil to drizzel over Salmon

-Grated Parasean Cheese

Preparation

Start the pasta in boiling salt water.

While the pasta is boiling, fry the bacon crisp. Remove the bacon to a separate dish add the onions, garlic, peppers, Italian seasoning, cayanne pepper to the drippings and saute until soft.

Salt, pepper and thyme sprinkled on both sides of the salmon. Place in a shallow dish (former skin side up) to broil in the oven with the rack set fairly high. Drizzle olive oil over both pieces. Broil to desired doneness turning about half way through the cooking process.

Drain and Rinse the Pasta and add it to the onion and pepper mixture and heat through. Stir in the reserved bacon.

To plate, put half the pasta on each plate and top with the Salmon. Garnish with the grated parmesean and serve.

I like a Dry Riesling but I think any nice chilled white wine would do. Add a crusty loaf of bread and enjoy.
