Extra virgin olive oil
1 medium russet potato, peeled
Kosher or other coarse salt to taste
1 tsp. crumbled dried rosemary
Heat oven to 375. Brush 2 large baking sheets with olive oil.
Cut potato lengthwise into 1/8 inch thick slices. Arrange in a single layer on the baking sheets and brush lightly with the oil.
Bake until golden throughout, about 15-20 minutes, checking often because chips will brown at different rates.
Drain chips on paper towels. Sprinkle with salt and rosemary while still hot.
