Ingredients

3 giant cans crushed or diced tomatoes

6 small cans tomato paste

6 onions

3 bunches cilantro

8 jalapenos

1 bulb garlic

6 - 8 8 sweet peppers

Preparation

In very large (or 2) sauce pots add canned tomatoes and paste. Stir. In food processor, chop onions, cilantro, jalapenos, garlic and sweet peppers. Add to paste mixture in sauce pot. Add 3/4 cup brown sugar, 1 1/2 vinegary and 3 tbsp. coarse salt.

Bring to a boil - boil for one hour.

Seal in hot jars (approx 15 medium jars).
