Ingredients

2 - 12 oz. cans of cooked chicken breast, or 1 1/2 lbs. of cooked chicken breast, diced.

1 cup red seedless grapes, halved

2 green onions, sliced

1/2 cup pecan pieces

1/4 cup cilantro leaves, diced.

[optional]

1 cup mayonaise

1 tsp. seasoning salt

6 croissants, sliced and lightly toasted

Preparation

Combine all ingredients and spoon onto toasted croissants. The chicken salad can also be served on a bed on greens for a lower carb. luncheon.
