Ingredients

2 T olive oil

1 garlic clove, minced

3/4 c bay shrimp, rinsed (I used 1#)

1 # feta, rinsed and crumbled (start with 1/2 # and add to taste)

6 green onions

4 fresh tomatoes, peeled, cored, seeded and finely chopped

salt and pepper (feta is salty so taste before adding)

1 # orzo pasta

Preparation

In a large bowl, combine olive oil, garlic, shrimp, feta cheese, onions and tomatoes. Toss to combine and let stand at room temperature for at least 1 hours. Prepare pasta according to package directions and drain well. Add hot pasta to sauce and toss. May eat warm or chilled
