My Salsa

12 - 16 firm, ripe plum tomatoes

1 medium red onion, small dice

2 jalapeno peppers, seeds and ribs removed, small dice

1 cup cooked orzo, cooled

1 - 2 cloves garlic, chopped

juice of 1 lime

1 1/2 tbsp. olive oil

1 tsp. dried or 2 tbsp. fresh cilantro

3/4 tsp. kosher salt

¼ tsp. freshly ground pepper

1/8 tsp. chili powder

1 tbsp. red wine vinegar

1/2 tsp. oregano

Preparation

Prepare tomatoes by removing tops by removing ribs and seeds and cutting into small dice. Combine remainder of ingredients. Refrigerate at least 1 hour before serving.
