Ingredients
1 1/4 - 2 cups orzo pasta, cooked al dente
1/2 cup extra virgin olive oil
1/2 cup red wine vinegar
2 tsp kosher salt
1 roasted red pepper, diced
1 roasted yellow pepper, diced
1/2 cup pine nuts
1 1/2 cups basil leaves, torn into large pieces
1/2 cup finely chopped red onion
1 cup crumbled feta cheese
Preparation
Toss the cooked pasta with olive oil, red wine vinegar and salt. Stir in the peppers, pine nuts, onion and basil. Sprinkle with the feta cheese. Serve at room temperature.
