Ingredients

1 box of Orzo (preferably Barillia)

1 Large red peper

1 large yellow peper

1 med red onion

2 cups of black beans(drained and rinsed)

2 cups of either good quality canned, frozen or freash nibblet crisp corn

2 stalks of lovage with leaves diced (used diced celery with leaves if no lovage is avail)

4 Tbsp of freash cilantro

1 bottle 12 oz of Tequilla Lime dressing/marinade there are many brands avail.

1/3 cup of olive oil as needed

1/4 cup(scant) of apple cider vinegar

1 & 1/2 cup of diced peper jack cheese

Salt and fresh ground pepper to taste

Preparation

Cook orzo according to package directions–after it has cooked strain and run cold water over it for a few mins. Set aside.

Dice peppers and onion into small pieces (about the size of the corn and balck beans)

Add to extra large bowl. Rinse and drain black beans add to bowl. Add corn to bowl. Wash lovage and dice with leaves and add to bowl. Chop cilantro add to bowl. Add cooked orzo and mix together with spoon. Add all of the Tequila Lime Dressing/Marinade continue to fold and mix well. Add olive oil and apple cider and mix well Add jack cheese Taste it! Add salt and pepper as desired. let chill over night or at least 4 hours. It tastes better the longer it chills and the flavors get to meld.
