Ingredients

1 Box Orzo pasta

2 cloves garlic

olive oil

white wine vinegar

shallots

1 stalks green onion

1 cucumber

1 container grape tomatoes

Preparation

Boil orzo as indicated on box and chill for 1 hour. Dice green onion, and slice cucumber. In large bowl diced green onion, sliced cucumber, chilled orzo and grape tomatoes. In separate bowl, mix together chopped shallots, 1/2 cup olive oil and add vinegar to taste. Let dressing stand 15 minutes then pour over pasta mixture and chill until ready to serve.

As a main dish, already cooked chilled salmon or chicken can be added on top.
