Ingredients
8 oz package Orzo, prepared-cook al dente, drain
2 ripe mangos, cut in 1/2 in. cubes
1 small red onion, diced
1 med. cucumber, peeled, diced
1 T fresh Basil, chopped
*Mixed Greens (mesclun)
*Fresh Mint
Dressing:
1 T Dijon mustard
1 t. minced garlic
1 T. honey
1/2 c. Balsamic Vinegar
2 T Extra Virgin Olive Oil
Salt & Pepper to taste
Preparation
Mix Dressing ingredients, refrigerate.
Mix salad ingredients. Add dressing, toss lightly. Refrigerate for at least one hour.
*Serving Suggestion: On small serving plates, place a handful of mixed greens in the center. Add a serving spoonful of salad. Top with sprig of mint.
