Ingredients

125g bacon,trimmed and chopped

500g beef mince

500 pork mince

1 onion, coarsley grated

2 garlic cloves, crushed

2 cups (160g) of fresh breadcrumbs

2 tspn fresh thyme leaves

1 egg, lightly beaten

1 tblspn red wine vinegar

2 tspn soft brown sugar

Preparation

Preheat ven to 180 deg. Lightly grease a loaf tin and line it with a single sheet of baking paper.

Fry bacon until brown and crisp. Drain on paper towel.

Place mince, onion, garlic, thyme, egg, vinegar, sugar and bacon in alarge bowl. Season well and mix together using your hands. Don’t overmix or the meatloaf will be too dense when cooked.

Spoon the mixture into the loaf tin and press down gently. Smooth the top and cook in the oven for 1 hour 10 mins or until browned and cooked through. Test it by pushing in a metal skewer or sharp knife, leaving it for 3 secs. Pull out skewer and hold it against your wrist. It should e hot.

Leave rest for 5 mins. and pour cooking juices into jug.

Serve with tomato sauce, peas anf potatoes.
