Ingredients

4 Boneless,skinless chicken cutlets

Mixed salad greens-enough for 4 dinner plates

1/2 cup shredded carrots

1/2 cup mandarin oranges

1/4 cup toasted sliced almonds

1/4 cup sliced scallions

1/4 cup chinese crispy noodles

Dressing:

1/4 cup peanut butter

2 tblsp sesame oil

1/3 cup white vinegar

1/3 cup canola oil

1 clove garlic finely chopped

1 inch fresh ginger peeled & grated

2 tblsp water

Salt & pepper

Set aside 1/4 cup of dressing.

Preparation

Heat home counter top grill or BBQ grill. Prepare dressing. Brush chicken w/ dressing (1/4 cup set aside) Divide mixed greens onto 4 dinner plates. Sprinkle with carrots & oranges & scallions. Grill chicken, brushing w/ dressing, till cooked through. Slice chicken. Drizzle dressing over salad. Top w/ sliced chicken. Sprinkle w/ noodles & almonds. Serve immediatly.
