Ingredients
1 T sesame oil, untoasted
2 c carrot, julienne
1 T ginger, minced
1/2 T garlic, minced
1 qt. plus 1 1/2 c chicken broth
1 1/2 c. oriental black pepper sauce
2 1/2 c rice, uncooked *
3 c California walnuts, chopped
12 cod fillets**, pan-fried
*Rice tested w/ parboiled white rice. If using other types of rice, you may need to adjust liquid amounts and cooking time.
**Substitute with other white fish if desired.
Preparation
(1) Saute carrots in hot oil until tender-crisp. Add ginger and garlic and saute a few seconds. (2) Add rice & bring to a boil. Cover; reduce heat to simmer and cook for 20-25 minutes. (3) Remove from heat; let stand 5 minutes. Remove cover and fluff rice. (4) Add 1 1/2 c of the walnuts and blend. (5) Per order, place 1 cup rice mixture on plate, Top with cod fillet; garnish with 1 T of walnuts
