Ingredients
organic oriental salad mix
granny smith apple, sliced
gorgonzola cheese, crumbled to taste
1 cup sugar
1-2 cup pecan halves
salt and pepper to taste
pinch ground cayenne pepper
2 tbsp green onion, chopped
1/4 cup cider vinegar
1/4 cup extra virgin olive oil
2 tbsp honey
1 tbsp Dijon mustard
chopped purple basil and cilantro to taste
Preparation
Candied Pecans
Method:
in a sauté pan over medium high heat add 1 cup sugar.
Cook until dissolved and becomes a nice amber color. Stir in
pecans, salt and pepper to taste and cayenne. Stir to coat well.
Spread out evenly on foil sprayed with cooking spray. Let cool
and chop to desired size.
Vinaigrette
Method:
in a mixing bowl add green onions, vinegar, olive oil,
honey, mustard and herbs. Whisk well and season with salt and
pepper to taste. To serve: place salad mix on plate. Drizzle vinaigrette
over lettuce. Add apple and cheese to taste. Sprinkle
with candied pecans.
