Ingredients

1 1/2cu all-purpose flour

1t baking powder

1/2t baking soda

1/2 t sea salt

1t ground cinnamon

3/4cu raw sugar, fine

2T melted butter

1 lg egg white

1 lg egg @ room temperature

1cu banana puree (made from 2 very ripe bananas)

1/2cu sour cream

1/2t vanilla extract

1/3cu chocolate chips

Preparation

Butter & flour a 9-inch square pan and preheat oven to 350F.

Sift together in a bowl the flour, baking powder, baking soda, salt and cinnamon. Mix in sugar.

In a large bowl, mix together the butter, egg white, banana puree, sour cream, and vanilla extract.

Make a well in the center of the flour mixture and stir in the wet ingredients with a spatula until almost mixed. Add the chocolate chips and stir until just combined. Don’t over stir!

Scrape the mixture into the prepared pan and bake 30-40 mins or until the center of the bread feels springy and just done. A tooth pick inserted into the center of the bread should come out clean.

Cool on a baking rack.
