Ingredients

Ingredients:

6 cups Organic Brown Rice

½ cup Walnuts

¼ cup each Red, Orange, and Yellow Peppers

Zest of two Lemons

¼ cup Dried Currants or Craisins

½ cup Italian Chopped Parsley

1/8 cup Fresh Lemon Juice

1/8 cup honey

¼ cup Olive oil

2 tablespoons Apple Cider Vinegar

Salt and Pepper to taste

Mix all of the ingredients together. Let stand for one hour prior to serving.
