Ingredients

1 c. flour

1 tsp. baking powder

1/2 tsp. baking soda

1/4 tsp. salt

1 tsp. cinnamon

1 tsp. nutmeg

3/4 c. Splender for baking

1/2 c. vegtable oil

1/2 c. Nabisco 100% Bran cereal (or Kellogg’s All-Bran)

4 TBSP. grated orange rind

1 tsp. vanilla

1 c. grated zucchini

3/4 c. chopped walnuts

Preparation

Preheat over to 325 degrees F. Combine first 6 ingredients and set aside. Beat Splender, oil and eggs until well combined. Stir in cereal, orange rind and vanilla. Add flour mixture, zucchini and nuts and mix well. Spread in 1 greased loaf pan. Bake at 325 for 50-55 min. Freezes well.
