Ingredients

2/3 c. pure maple syrup

½ c. orange juice

¼ c. minced onion

2 tsp. grated orange peel

2 tsp. fresh lemon peel

1 tsp. dry mustard

2 racks baby back pork ribs (about 3 lbs.)

Preparation

Combine first 6 ingredients in heavy medium sauce pan. Simmer over medium heat 5 minutes, stirring occasionally. Pour sauce into large bowl and cool. (Sauce can be prepared 1 day ahead. Cover and refrigerate.) Preheat oven to 350*F. Season rib racks with salt and pepper. Arrange on large baking sheet. Bake 35 minutes. Cool 15 minutes. Cut racks into individual ribs. Add ribs to sauce in bowl and turn to coat. Return to same baking sheet. Bake 30 minutes longer, basting twice with remaining sauce.
