Ingredients

2 acorn squash (1 pound each), halved and seeded

1/3 cup water

2 tablespoons orange all-fruit spread

2 tablespoons orange juice

2 tablespoons honey

1/4 teaspoon salt

Preparation

  1. Preheat the oven to 400°F.

  2. Place the squash halves cut-sides down in baking pan. Add the water, cover with foil, and bake for 25 minutes.

  3. Meanwhile, in a small bowl, combine the orange fruit spread, orange juice, honey, and salt.

  4. Drain any liquid remaining in the baking pan and turn the squash cut-sides up. Spoon the orange-honey mixture into the squash and bake for 35 minutes, or until tender.
