Ingredients

1/8 cup rice vinegar

1/8 cup marmalade (Orange)

1/8cup sprite or tangerine lime sparkling water. (Orange juice would probably work as well.)

2 tsp sugar

pinch salt

1/4 cup diced tomato

1/4 cup diced cucumber

1/4 cup diced orange or yellow bellpepper

2 green onions

Preparation

Combine in a bowl and let stand and marinate. I only did a few minutes while I cooked the ham into the taco shells, but you’re welcome to have more patience than I do.

Then shred boiled ham into flour gordita tortillas and fry in vegetable oil over medium high heat until golden brown. Fill with fruit mixture, top with lettuce and sharp cheddar cheese.
