Ingredients
4 chicken breasts
2 orange
2 Tblsp Honey
1 Tbsp butter, melted
Dash Crushed Red Pepper
4 slices Proscuitto
1/2 cup feta
1 cup spinach, rinsed and stems removed
1 tsp oregano
toothpicks
Preparation
Squeeze juice from orange. Combine orange juice, honey and butter in small dish, mix well and set aside. Cut pouches, lengthwise, into each chicken breast. Insert on slice Proscuitto into chicken breast, followed by a few damp spinach leaves, and 1/8 cup feta. Sprinkle with oregano and pin pouch closed with toothpick. Baste outside of chicken with orange juice mixture. Grill on medium heat about 15 minutes or until chicken is cooked through-basting frequently until all juice mixture is used up.
