Ingredients
2 1/4 cups all-purpose flour
1/4 cup firmly packed brown sugar
1 tablespoon grated orange peel
1 1/2 teaspoons baking soda
1/2 teaspoon each ground ginger and ground cinnamon
1/8 teaspoon ground cloves
3/4 cup water
2 eggs, lightly beaten
1/4 cup dark molasses
1/4 cup each margarine and whipped butter, melted and cooled
Preparation
Preheat oven to 375F. In large mixing bowl combine flouer, sugar, orange peel, baking soda, and spices; set aside.
In small mixing bowl thoroughly combine remaining ingredients; add to flour mixture and stir until mixture is moistened (do not beat or overmix).
Spray twelve 2 1/2-inch diameter muffin pan cups with nonstick cooking spray and fill each with an equal amount of batter (each will be about 3/4 full). Bake in middle of center oven rack for 15 minutes (until muffins are brown and a toothpick, inserted in center, comes out clean). Invert muffins onto wire rack and let cool.
