Ingredients
(Chicken)2 skinless,boneless chicken breasts(slice thin,cut into bite size pieces).1/2 cup orange juice. 4 cloves minced garlic.1 1/2 tsp chile powder.
(Dressing)1/4 cup orange juice. 1 TB cider vinegar. 2 oranges peeled and cut into segmaents.1 clove garlic minced.1 tsp grated orange peel. 1 tsp olive or walnut oil.1/2 tsp honey.1/4tsp crushed red pepper.
(Salad)1 head romaine lettuce,washed & torn.1 cup peeled jicama strips.1/2 cup cube red bell pepper,1/2 cup crumbled feta cheese.
Preparation
Prepare chicken. Combine 1/2 cup orange juice,4 cloves garlic & 1 1/2 tsp chile powder in large nonstick skillet. Bring to boil ovr high heat. Boil about 2 minutes or until mixture just coats bottom of pan. Reduce heat to medium. Add chicken,cook and stir until chicken is white and no longer pink,about 3 minutes. Remove from heat,allow to cool. Make dressing: Combine 1/4 cup orange juice,1 TB cider vinegar,1 tsp grated orange peel,1 tsp oil,1/2 tsp honey & 1/4 tsp crushed red pepper. set aside. Make salad. Combine lettuce,jicama, orange segmants & bell pepper, drizzle with dressing and toss. Top with cooled chicken & cheese.
