Ingredients

1 large orange approx 300 gms

3 eggs

185 gms melted butter

1 cup castor sugar

1 1/2 cups SR Flour

Preparation

Wash & roughly chop orange and place all of the fruit, skin and pith included, in food processor, discarding pips. Process until smooth. Add eggs, sugar and melted butter and process until well combined. Add Flour and pulse until just combined. Pour into a prepared tin and bake at 170 degrees Celsius for 45 mins until cooked. Remove and cool in tin for 5 mins and then on a rack until cold. Ice with orange flavoured frosting.
