Ingredients

1 cup sugar

4 separated eggs

1 cup plain flour

2 tsp baking powder

125g melted butter

Grated rind & juice of one orange

3/4 cup of orange juice (to pour on cake when cooked)

2 tbs sugar

Preparation

  1. Beat sugar & yolks until thick & pale.
  2. Sift flour and baking powder & fold into yolks, then fold in the butter, rind & juice of an orange and stiffly beaten egg whites.
  3. Put in greased tin & bake @ 180 degrees for 35-40min.
  4. Remove from oven. Let cool slightly and then turn out cake from pan.
  5. Combine the orange juice & sugar until dissolved. Put cake back into pan while still quite warm & pour over juice mixture, allowing it to soak into the cake.
  6. Either dust cake with icing sugar when cool or ice using icing sugar & orange juice to make a runny icing.
