Ingredients

1/2 cup rolled oats

1/2 cup plain yogurt

1 1/2 cup whole wheat flour

1 Tbsp ground flax seed

1/2 tsp cinnamon (optional)

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1medium orange

1/2 cup raw sugar

1/4 cup canola oil

1 egg

1cup blueberries

1/2 cup toasted walnuts or pecans

Preparation

Preheat oven to 400. Stir together oats and yogurt in a small bowl. Set aside for 5 minutes. Whisk flour, flax, baking powder,baking soda, salt in a medium bowl. Grate the orange peel add to flour mixutre. Squeeze 1/2 cup orange juice and whisk together with sugar, oil add to oat mixture. Blend oat mixture in to flour mixture, stir until just combined. Fold in berries and nuts. Spoon batter into muffin cups. Bake for 15 minutes or until tooth pick comes out clean.
